Smartphone Apps - Should apps not be downloaded from any countries? If so, which ones?
I had read that some countries governments have access to app users shared data despite what it says under app details in Google Play Store.
I have some really good apps that I think I'll probably have to shed. Please advise. Thanks.

I honestly don't think it matters at this point. The company that publishes the app has all of your data. Almost any big publisher will sell all of the data they collect. Once it is sold, it can be resold. Even if it isn't sold, high profile hacks are dime-a-dozen these days. Assume anything you put into an electronic device will, eventually, make it's way into an open database someday.
As someone else said, you cant really trust digital devices. Any digital device has potential to spy on you.
The best solution is to air-gap everything. But that also makes it practically useless.
My solution is to selfhost everything I can and have those services in containers and behind a vpn. Its not perfect but light years ahead of anything else I came across.
Switch to Apple if you're concerned about your data privacy. Google harvesting your data is their entire business model. Apple just wants to sell you their products.
