Thinking of trying this out. I am seeing GrubHub, DoorDash, Postmates, UberEats. Where to go?

Avoid those. Call the restaurant directly or use their website. Because capitalism.
At that point it's better for me to just get the food directly, because I'm the most socially incompetent person alive, especially on the phone.
Online ordering is the best, especially when it's the only option even at the restaurant. Pay on your phone and leave, it's crazy more places haven't adopted it.
Some smaller restaurants rely on these third parties as they can’t pay for drivers.
Let them tell you which one they prefer then.
In that case they'll likely suggest you use one of those sites on theirs.
