Bluetooth supports up to lossless Audio CD sound quality: https://en.m.wikipedia.org/wiki/AptX
I dont really know what non-bluetooth headphones may use for compression, but my intuition says they're probably not better.
Having said that, you might want to choose a non-bluetooth headphone over a Bluetooth one: maybe your computer doesn't support a high quality audio codec, maybe the other components in the headphones are better (DAC, amplifier, etc.)

I think most wireless usb devices still uses bluetooth, just with hardcoded devices. So it would ideally be identical.
