Finnish squeaky cheese with fresh cloudberries and cream
It's cloudberry season here in the Nordics, and the bounty is very much worth the time spent foraging in mosquito-infested bogs.
This is a dessert traditionally enjoyed in Northern Finland, and it is one of my favourite summer foods.
They're quite unique. They're a lot more tart and bitter than raspberries, with an after taste similar to that of some particularly tangy craft sour beers. The seeds are also larger, but the slight crunch is actually very satisfying.
The flavour is not universally loved, though, and especially children often prefer cloudberries with a heaping of sugar.
