Do you cook the hashbrowns on one side first, then flip and fill? Otherwise you'd have raw potatoes on the inside and the egg would leak through.
Usually you bake the quiche crust first, then add the egg filling and put it back in the oven. I suppose it's the same here.

That is not the same photo. That one's not even on a cooling rack. It's also clearly different in every other regard. Different asparagus. Different potato structure. Different angle.
