It's a beautifully done video with stunning visuals but complete bullshit conclusion. Because they're compairing USB cable with thunderbolt cable. 2 completely different products.
The visuals are really neat though. It's a 3D scan of the connector innards. Just skim through it, it's beautiful.

I’m curious, would this satisfy the EU regulations? Technically they’re not supplying a USB-C cable but a Thunderbolt cable instead, so I’m wondering if that technicality is any sort of importance or not for the EU.

It's a USB-C cable, which can optionally support other things like Thunderbolt and DisplayPort.
