Currently have everything in a Node 804 sitting on a shelf in the office. Will be racked soon, along with everything else, to save space. Nothing too crazy

Plex, Sonarr, Radarr, Prowlarr, Deluge, Overseerr, Tautulli, PMM, Homarr, plus a few other random ones I mess around with.
Running all services through docker integration in Unraid OS.
I’d have loved to go all 4k myself, but I just don’t have the storage capacity for it atm. plus, even with my 4K tv, I just don’t see such a huge difference between 4K and 1080. I have a small apt so I don’t have a huge tv. if I did, I’d notice I more, I guess ¯\_(ツ)_/¯
My Plex server is a small Intel QuickSync box in a 2U chassis in my rack.

no discreet GPU, relying on Celeron's built-in UHD 610 iGPU

It's running PlexPass edition on Ubuntu 22.04. This little beast can do 15 simultaneous (non-4k) hardware transcodes without breaking sweat.
The actual media is on a 50TB UnRaid server that also hosts various media managers like Sonarr, Radarr, Lidarr, Bazarr, etc. I also have another Plex server instance running in a Docker container for direct playing of 4k content, because QuickSync can't quite handle that.
