CO2 would cause the cream to sour as a result of it's acidity, and plain nitrogen isn't soluble enough, so it's probably not very easily replaced.

I have no problem with this. Honestly, as others have said, here in Australia, tired of seeing dumped canisters, and it is clear that its a problem which is growing out of control, and its a problem which companies are exploiting for profit.
